- Preheat oven to 350 degrees
- Whisk together flour, baking soda, and salt in a medium bowl. Set aside.
- Cream your coconut oil and sugars
- Once well creamed, add egg and vanilla. Mix only long enough to combine.
- Turn off mixer and add half of your flour mixture. (Tip: Use a wooden or rubber spatula to incorporate to avoid a mess when turning the mixer back on.)
- Mix until combined, then add the rest of the flour to your mixer. Mix only until combined, do not over mix.
- Add chocolate chips and mix briefly on low speed, or by hand just long enough to incorporate the chocolate chips.
- let the dough to rest while you line a cookie sheet with parchment paper
- Roll into 1 1/2 Tbs size balls, put desired amount on cookie sheet and bake for 10-12 minuets. (Tip: for freezing, place on cookie sheet and put in freezer until frozen. Once frozen, put into a ziplock bag or freezer safe container.)
- Allow to cool on cookie sheet for 1 to 2 minuets, then move to cooling rack.
