Alpha Gal Friendly Black Bean Burger

Easy and deliciously satisfying black bean burgers.

Ingredients
  

  • 2 14 oz canned black beans
  • 1 TBS olive oil extra virgin
  • 1 tsp olive oil for sautéing
  • 1/2 bell pepper chopped
  • 1/2 onion chopped
  • 3 cloves garlic minced
  • 1 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1 tsp chili powder
  • 1/4 tsp smoked paprika
  • 1/2 cup oat flour or bread crumbs
  • 2 lrg eggs
  • 2 Tbsp mayonnaise
  • 1/4 tsp salt optional

Method
 

  1. Preheat oven to 325 degrees
  2. Spread 2 14 oz canned black beans on a parchment paper lined cookie sheet and bake for 15-20 minuets. Until slightly dried out.
  3. 1/2 bell pepperSaute 1/2 bell pepper, 1/2 onion, and 3 cloves garlic, in 1 tsp olive oil
  4. Then set aside to cool
  5. Combine 1 1/2 tsp cumin, 1/2 tsp garlic powder,1 tsp chili powder,1/4 tsp smoked paprika,1/4 tsp salt in a small dish
  6. Preheat oven to 375 degrees if baking
  7. In a large bowl or food processor, combine the dry beans, 2 lrg eggs, 1 TBS olive oil, 1/2 cup oat flour,2 Tbsp mayonnaise , and seasonings. Either mash with fork or pulse in food process to combine but try to leave some larger pieces of beans.
  8. Form 6 1/2 cup patties
  9. Place patties on a parchment paper lined cookie sheet and bake for 20 minuets, turning over at 10 minuets.
    or place in a non stick skillet and cook for apox 5 mins per side
    Internal temperature should be 160 degrees.
    *or place on parchment paper in the freezer until frozen, then put them in a freezer safe container or plastic bag (with parchment paper to separate them)for up to 3 months.
